Alfredo Pasta with Light Cheese

Alfredo Pasta with Light Cheese

  • Ingredients:
    • 1 cup milk (of your choice)
    • ½ cup light Tzafetta cheese
    • 1 tbsp cornstarch
    • ¼ tsp salt
    • ⅛ tsp freshly ground black pepper
    • ¼ tsp garlic powder
    • ½ cup freshly grated Parmesan cheese
    • Dried basil
    • Dried oregano
    • ½ pack cooked pasta of your choice
    • Cooked meat or vegetables of your choice (optional)
    • Fresh chopped parsley
  • Instructions:
    1. In a blender, add the milk, Tzafettas cheese, cornstarch, salt, pepper, garlic powder, and grated Parmesan. Blend until smooth, scraping down the sides as needed.
    2. Transfer the mixture to a small saucepan. Add dried basil and oregano to taste. Heat over medium-low, stirring frequently, until the sauce is warmed through.
    3. Taste and adjust seasoning with extra salt, pepper, or herbs if needed. Reduce heat to low and let the sauce simmer for about 5 minutes until slightly thickened.
    4. Add the cooked pasta to the sauce and toss with tongs to coat evenly. Let it simmer in the sauce for 2-3 minutes.
    5. Transfer the pasta to serving plates or bowls. Top with cooked meat or vegetables if desired. Drizzle with any leftover Alfredo sauce and garnish with fresh chopped parsley.
