The objective of the present project was:

a) to investigate the effect of using container from steel tanks (SST) of 500 kg for ripening and preservation, on the composition, biochemical, microbiological characteristics, and textural properties of white cheese in brine.

b) Design and construction of a special dryer capable of being used in the production of dried whey cheeses with improved physicochemical and organoleptic characteristics and microbial stability.
